Instructions

Preparing the Aromatics

  • Heat the oil in a pan or pot. Add the bay leaf and cinnamon stick. Sauté until fragrant.
  • Add the sliced onions and cook until lightly browned.
  • Stir in the sliced ginger and minced garlic, cooking briefly until fragrant.

Adding the Vegetables and Spices

  • Add the chopped tomatoes and cook until softened. Season with salt and chili powder.

Incorporating the Rice

  • Add the soaked basmati rice and stir well to coat with the spices and vegetables.
  • Pour in 3 cups of water (adjust as needed for your rice). Stir gently.

Simmering and Adding Eggs

  • Bring to a simmer, then reduce heat to low. Cover and cook until the rice is almost tender and most of the water is absorbed.
  • Gently stir in the hard-boiled eggs and ground fennel seeds.

Finishing Touches

  • Cover the pan with foil and let it steam (dum) for 5 minutes.
  • Remove the foil and garnish with the finely chopped brown onion, fresh cilantro, and mint (optional).
  • Serve hot and enjoy!

Recipe Notes

Expert Tips for the Perfect Saufyani Egg Pulao

  • Soaking the basmati rice for at least 30 minutes before cooking helps to achieve a fluffier texture.
  • Adjust the amount of chili powder to your preferred level of spiciness.
  • For an extra layer of flavor, consider adding a pinch of turmeric powder along with the other spices.
  • Don't overcook the rice; it should be tender but still have a slight bite.
