Ingredients
Main Ingredients
- 1 cup Basmati Rice or 250g cooked rice
- 2 cup Carrots from 4-5 carrots, grated
- 3 Tbsp Peanuts roasted
- 3 Tbsp Onion chopped
- 2 tsp Garlic minced
- 2 Tbsp Bell Peppers chopped
- 2 Slit Chillies green
- 1 tsp Salt
- 2 Tbsp Butter
Spice Powder
- 1 Tbsp Coriander Powder
- 1 Tbsp Coriander Seeds
- 1 inch Cinnamon Stick
- 1/2 tsp Anise Seeds
- 2 Cardamom Pods
- 1 Tbsp Chillies dried, red
Instructions
- In a broad pan, heat butter or oil. Add cumin seeds and let them splutter. This adds a warm, earthy flavor to the pulao.
- Sauté minced garlic until fragrant and lightly golden. Add chopped onions and bell pepper. Sauté for a minute until slightly softened.
- To make the spice powder, dry roast coriander seeds, cinnamon stick, anise seeds, cardamom pods, and dried red chilies in a separate pan until fragrant. Grind into a powder. Add the spice powder to the pan with the vegetables and stir well to combine.
- Add the grated carrots and salt. Stir for 30 seconds to coat the carrots with the spices. Then, add the roasted peanuts and mix gently.
- Gently fold the carrot-peanut mixture into the cooked rice. Be careful not to break the rice grains. This ensures a light and fluffy pulao.
- Garnish with fresh coriander leaves. Serve hot and enjoy! This pulao pairs well with raita or any crispy snack.
Recipe Notes
Good To Know
- For extra crunch and depth of flavor, toss the peanuts in a teaspoon of ghee or coconut oil and roast them until golden before adding them to the pulao; this prevents them from softening when mixed with the rice.
- If you prefer a spicier pulao, try adding a teaspoon of freshly ground black pepper or a pinch of red chili flakes along with the green chilies for a subtle heat boost that complements the sweetness of the carrots.
- To make this dish vegan, ensure you use oil instead of ghee for tempering the spices and roasting the peanuts; coconut oil adds a lovely aroma that pairs well with the carrots and peanuts.
- For a vibrant presentation, garnish the pulao just before serving with a sprinkle of finely chopped fresh coriander and a handful of pomegranate seeds for a pop of color and a burst of tangy sweetness.
Expert Tips
- For a richer flavor, use basmati rice. Its long grains and aromatic nature complement the other ingredients beautifully.
- Don't overcook the rice. Each grain should be separate and fluffy, not mushy. Rinse the rice thoroughly before cooking to remove excess starch.
- Customize the vegetables. Feel free to add other vegetables like peas, green beans, or corn to make this pulao even more nutritious and colorful.
Storage Instructions
- Store leftover pulao in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop with a splash of water to prevent drying out.
