Ingredients
Aromatics and Spices
- 2 tbsp Vegetable Oil or ghee for a richer flavor
- 1 Bay Leaf tej patta
- 2 Star Anise
- 1 Mace marathi moggu - a spice with a nutmeg-like flavor. if unavailable, omit or substitute with a pinch of nutmeg.
- 3 Cardamom pods, elaichi, green, lightly crushed
- 1 small stick Cinnamon stick
Vegetables and Flavorings
- 1 medium Onion finely chopped
- 1 tsp Ginger-Garlic Paste
- 4 Chilies finely chopped; adjust to taste, green
Liquids and Seasoning
- 2 cup Water
- 1.5 tsp Salt or to taste
- 1 tbsp Clarified Butter for extra richness. use vegetable oil if omitting., optional
Instructions
Prepare the Rice
- Wash the basmati rice thoroughly and soak in water for 15 minutes. Drain well and set aside.
Sauté the Aromatics
- Heat the oil (or ghee) in a cooker or heavy-bottomed pot over medium heat. Add the bay leaf, star anise, mace, cardamom pods, and cinnamon stick. Sauté for about 30 seconds until fragrant.
Cook the Vegetables
- Add the chopped onion and sauté until softened and lightly golden. Stir in the ginger-garlic paste and green chilies and cook for another minute until fragrant.
Combine and Cook the Pulao
- Add the soaked rice and peas to the pot. Stir gently to combine and cook for 1 minute.
Simmer and Steam
- Pour in the water, bring to a boil, then reduce the heat to low. Close the lid of the cooker or pot and simmer until the rice is cooked through (approx. 15 minutes).
Finish and Serve
- Once cooked, let the pulao rest for 5 minutes before gently fluffing with a fork. Stir in the ghee (if using) and mix well. Serve hot with cucumber raita or your favorite accompaniments.
