Preparation

  • Rinse the basmati rice thoroughly under cold water until the water runs clear.
  • Heat oil in a pan or pot over medium heat. Add mustard seeds and cumin seeds; let them splutter.
  • Add asafoetida (if using) and sauté briefly.
  • Add chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and sauté for another minute until fragrant.
  • Add chopped tomatoes and sauté until softened.
  • Stir in turmeric powder, red chili powder, garam masala, and salt. Cook for a minute, stirring constantly.
  • Add the cubed paneer and sauté for 2-3 minutes until lightly browned.
  • Add the rinsed basmati rice and sauté for 2 minutes, stirring well to coat the rice with the spices.
  • Pour in 3 cups of water (adjust as needed depending on rice and desired consistency). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  • Garnish with fresh coriander leaves.

  • Serve hot, garnished with fresh coriander leaves. Enjoy with raita or a side salad.
