Ingredients
Spices and Aromatics
- 4 Chilies green, roughly chopped
- 2 Cloves
- 2 Cardamom Pods
- 2 Bay Leaves
- 2 inch Cinnamon Stick
- 10 Peppercorns black
- 1 Star Anise small piece
Rice and Vegetables
- 2 cup Basmati Rice rinsed
- 1 cup Peas boiled, fresh or frozen, green
Dairy and Protein
- 250 gm Cottage Cheese cut into bite-sized pieces
Other Ingredients
- 1-2 tsp Salt or to taste
- 2 tbsp Coriander chopped, fresh
- 2 tbsp Pomegranate Seeds
- 4 tbsp Vegetable Oil or ghee (clarified butter)
- 3.5 cup Water
Instructions
Sauté the Aromatics
- Heat vegetable oil or ghee in a large pan or pot over medium heat. Add the cloves, cardamom, bay leaves, cinnamon stick, peppercorns, and star anise. Sauté until fragrant, about 1 minute.
Add Chilies and Peas
- Add the chopped green chilies and sauté for another 15 seconds. Stir in the boiled green peas.
Cook the Rice
- Add the rinsed basmati rice, salt, and water to the pan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked through and the water is absorbed.
Fry the Paneer
- While the rice cooks, heat 1 tablespoon of oil or ghee in a separate pan. Add the paneer cubes and fry until golden brown on all sides.
Assemble and Serve
- Once the rice is cooked, fluff it gently with a fork. Serve the Matar Paneer Pulao on plates. Garnish with fresh coriander leaves and pomegranate seeds. Arrange the fried paneer pieces on top.
