  • Heat vegetable oil or ghee in a large pan or pot over medium heat. Add the cloves, cardamom, bay leaves, cinnamon stick, peppercorns, and star anise. Sauté until fragrant, about 1 minute.

Add Chilies and Peas

  • Add the chopped green chilies and sauté for another 15 seconds. Stir in the boiled green peas.

Cook the Rice

  • Add the rinsed basmati rice, salt, and water to the pan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked through and the water is absorbed.

Fry the Paneer

  • While the rice cooks, heat 1 tablespoon of oil or ghee in a separate pan. Add the paneer cubes and fry until golden brown on all sides.

Assemble and Serve

  • Once the rice is cooked, fluff it gently with a fork. Serve the Matar Paneer Pulao on plates. Garnish with fresh coriander leaves and pomegranate seeds. Arrange the fried paneer pieces on top.
