- 1 Tbsp Coconut Cream
Dry Ingredients
- 2 Tbsp Desiccated Coconut Powder
- 1/2 tsp Turmeric Powder
- 1/4 tsp Salt or to taste
Toppings and Cooking Oil
- 1/2 cup Tomatoes chopped
- 1 Tbsp Chilies chopped, green
- 1 Tbsp Coconut Oil
Instructions
- In a mixing bowl, whisk the eggs until light and frothy. This incorporates air for fluffy pancakes.
- Add the coconut cream, desiccated coconut powder, turmeric powder, and salt to the whisked eggs.
- Whisk until just combined. Be careful not to overmix.
- Heat the coconut oil in a non-stick frying pan over medium heat.

- Immediately sprinkle the chopped tomatoes and green chilies over the uncooked side of the pancakes.
