Ingredients
For the Pancakes
- 150 gm Dates 75g pureed, pitted; 75g finely chopped
- 250 ml Water hot
- 350 gm Self-Raising Flour
- 100 gm All-Purpose Flour
- 2 tbsp Coconut Sugar organic
- 1/2 tsp Cinnamon ground
- 500 ml Milk
- 100 gm Butter melted; plus extra for greasing
- 1 Egg large, whisked
For the Coconut Caramel Sauce
- 275 ml Heavy Cream fresh
- 120 gm Coconut Sugar organic
- 60 gm Butter unsalted
Instructions
Prepare the Dates
- Place pitted dates in a bowl. Pour hot water over them and let them sit for 15 minutes to soften. Finely chop half of the softened dates and puree the remaining half.
Make the Pancake Batter
- In a large bowl, whisk together self-raising flour, all-purpose flour, coconut sugar, and cinnamon. In a separate bowl, combine milk, melted butter, and the whisked egg. Add the pureed and chopped dates to the wet ingredients. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
Cook the Pancakes
