  • 1 handful Nuts mixed, pistachios, roasted almonds, walnuts (optional)
  • 1/2 cup Maple Syrup or other preferred syrup

Instructions
 

Prepare the Batter

  • Sift together the self-raising flour, baking soda, and salt into a large bowl. Add the castor sugar and mix well. Create a well in the center.

Combine Wet Ingredients

  • In a separate bowl, whisk together the egg and milk until light and frothy.

Mix Wet and Dry

  • Gradually pour the wet ingredients into the well in the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Add Apricots

  • Stir in the finely chopped dried apricots.

Cook the Pancakes

  • Heat a lightly oiled non-stick frying pan over medium-low heat. Pour 1/4 cup of batter onto the hot pan for each pancake.

Flip and Finish
