Instructions

Combine Dry Ingredients

  • Whisk together the whole wheat flour, baking powder, cocoa powder, and salt in a large bowl. Set aside.

Combine Wet Ingredients

  • In a separate bowl, whisk together the water, sugar, melted butter (or oil), vanilla extract, and lemon juice (or vinegar).

Combine Wet and Dry

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Let the batter rest for 5 minutes.

Cook the Pancakes

  • Heat a lightly oiled non-stick griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Drizzle a little extra oil or melted butter around each pancake as it cooks.

Garnish and Serve

  • Serve the pancakes immediately, drizzled with chocolate syrup and garnished with chopped strawberries. Enjoy!

Recipe Notes

Expert Tips for Perfect Eggless Chocolate Pancakes

  • For extra fluffy pancakes, gently fold the batter a few times after combining wet and dry ingredients, instead of stirring vigorously.
  • Don't overmix the batter! Overmixing will develop the gluten in the flour, resulting in tough pancakes.
  • Adjust the amount of sugar to your liking. Brown sugar can add a richer flavor.
  • If your batter is too thick, add a tablespoon or two of water at a time until you reach the desired consistency.
