Ingredients
Dry Ingredients
- 1 1/2 cup All-Purpose Flour also known as maida
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 cup Sugar granulated sugar
- 1 tbsp Poppy Seeds
Wet Ingredients
- 1 Egg
- 1 cup Milk
- 2 tbsp Lemon Juice freshly squeezed is best
- 1 tbsp Lemon Zest optional, but adds great flavor
- 2 tbsp Butter plus extra for cooking
Instructions
Prepare the Dry Ingredients
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, sugar, and poppy seeds.
Combine the Wet Ingredients
- In a separate bowl, whisk together the egg, milk, lemon juice, lemon zest (if using), and melted butter until well combined.
Combine Wet and Dry
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
Rest the Batter
- Let the batter rest for 5-10 minutes. This allows the gluten to relax, resulting in fluffier pancakes.
Cook the Pancakes
- Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake.
Flip and Finish
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
Serve and Enjoy
- Serve the pancakes immediately with your favorite toppings, such as honey, maple syrup, fresh fruit, or whipped cream.
Recipe Notes
Expert Tips for Perfect Lemon Poppy Seed Pancakes:
- For extra fluffy pancakes, use buttermilk instead of regular milk.
- Don't overmix the batter; a few lumps are okay. Overmixing will result in tough pancakes.
- If your batter seems too thick, add a tablespoon or two of milk until you reach the desired consistency.
- For a richer flavor, use brown sugar instead of granulated sugar.
