Ingredients
Fish
- 500 gm Fish Fillets
Spice Paste
- 1/2 tsp Ginger Paste
- 1/2 tsp Garlic Paste
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder
- 1 1/2 tsp Salt or to taste
- 2 tbsp Water
Other Ingredients
- 1 tsp Cumin Seeds
- 1/2 tsp Onion Seeds
- 1/2 cup Tomatoes chopped
- 1 tbsp Coriander chopped
Instructions
- Wash the fish fillets and pat them dry. In a small bowl, combine the ginger paste, garlic paste, turmeric powder, chili powder, and salt. Add a little water to form a smooth spice paste. This paste will marinate the fish and infuse it with flavor.
- Lightly coat the fish fillets with the spice paste, ensuring they are evenly covered. Set aside to marinate while you prepare the other ingredients. Marinating allows the fish to absorb the flavors of the spices.
- Heat a pan over medium heat. Add the cumin seeds and onion seeds. Sauté for about a minute until fragrant. The toasted spices will release their aromatic oils, enhancing the overall flavor of the curry.
- Add the chopped tomatoes to the pan and cook for another minute until they begin to soften. Tomatoes add a touch of acidity and sweetness to the curry.
- Now, add the prepared spice paste to the pan. Stir well to combine with the tomatoes and spices. Cook for a minute or two, allowing the flavors to meld.
- Gently place the marinated fish fillets in the pan. Add a splash of water if needed to create a light gravy. Be careful not to overcrowd the pan.
- Reduce the heat to low, cover the pan, and simmer for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork. Covering the pan traps the steam and helps the fish cook evenly.
- Garnish with fresh cilantro. Serve hot with rice or roti.
Recipe Notes
Good To Know
- For an extra layer of flavor, briefly toast the onion seeds (kalonji) in hot oil before adding other spices; this releases their aroma and infuses the oil for a more authentic Bengali touch.
- If you prefer a thicker gravy, mash some of the cooked tomatoes with the back of your spoon towards the end of cooking, or add a spoonful of boiled and mashed potato for subtle body without altering the flavor.
- To prevent fish fillets from breaking during cooking, lightly fry them in turmeric and salt first, then add them gently to the simmering curry and avoid stirring vigorously.
- For a fresh finish, garnish the curry with a handful of chopped coriander leaves and a squeeze of lime just before serving; this heightens the tangy notes and balances the rich spices.
Expert Tips
- Adjust the amount of green chilies to control the heat level of the curry according to your preference.
- For a richer flavor, use mustard oil for cooking, but be cautious as it has a strong flavor. If you prefer a milder taste, use vegetable oil.
- Serve this fish curry with steamed rice or roti for a complete and satisfying meal.
Storage Instructions
- Allow the curry to cool completely before storing.
- Transfer the leftover curry to an airtight container and refrigerate for up to 3 days.
- Reheat gently on the stovetop or in the microwave before serving.
