- 3/4 cup All-Purpose Flour
- 3/4 cup Wheat Flour whole
- 1/2 tsp Carom Seeds ajwain
- 1 tsp Salt or to taste
Wet Ingredients
- 1 tbsp Clarified Butter ghee, or vegetable oil
Vegetables & Herbs
- 1/2 cup Onion finely chopped
- 2 tsp Chili adjust to taste, finely chopped, green
- 1 cup Fenugreek Leaves freshly chopped, methi
Other
- Water as needed
Instructions
Prepare the Dough
- Combine all dry ingredients in a large bowl. Add ghee and mix well. Gradually add warm water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Let the dough rest for at least 30 minutes, covered with a damp cloth.
Shape and Roll the Rotis
- Divide the dough into equal-sized portions. Roll each portion into a thin, round circle using a rolling pin and a little dry flour to prevent sticking.
Cook the Rotis
- Heat a lightly oiled griddle or tava over medium heat. Place a roti on the hot surface and cook for about 30-45 seconds per side, or until lightly golden brown and puffy. Use tongs to flip. You may need to use additional ghee to keep them from sticking.
Serve
- Serve the hot Methi Ki Missi Rotis immediately with your favorite curry and butter or ghee.

- For extra flavor, lightly toast the carom seeds (ajwain) before adding them to the dough.
- If the dough is too sticky, add a little more flour, one tablespoon at a time.
- Don't over-knead the dough, or the rotis will become tough.
- For a crispier roti, cook it over higher heat.
