Ingredients
Spices & Aromatics
- 2 Cardamom Pods green, lightly crushed
- 1 Cardamom Pod black, lightly crushed
- 2 Cloves
- 2 Peppercorns black, whole
- 1.5 tsp Salt or to taste
Vegetables
- 1 medium Onion finely chopped
- 1 cup Vegetables and bell peppers – chopped, green beans, mixed, peas, such as carrots
Rice & Fat
- 1 cup Basmati Rice rinsed and cooked according to package directions
- 2 tbsp Ghee or vegetable oil
Instructions
Prepare the Aromatics
- Heat clarified butter in a pan over medium heat. Add green cardamom, black cardamom, cloves, and peppercorns. Sauté for 30 seconds until fragrant.
Sauté the Vegetables
- Add the finely chopped onion and sauté for 1-2 minutes until softened. Add the mixed vegetables and sauté for 4-5 minutes until slightly tender-crisp.
Combine and Serve
- Stir in the cooked basmati rice and salt. Mix well to combine all the ingredients. Cook for another minute to heat through. Serve hot.
