Ingredients
Produce
- 10 leaves Spinach roughly chopped
- 1/2 cup Coriander freshly chopped
- 1/4 cup Mint Leaves freshly chopped
- 2 Chillies finely chopped, green
- 2 medium Bell Peppers finely chopped, green
Pantry
- 2 tbsp Cooking Oil
- 1/2 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 3-4 Bay Leaves
- 10 clove Garlic finely chopped or crushed
- 2 medium Onions finely chopped
- 1/2 cup Peas frozen or fresh, green
- 1/2 tsp Garam Masala
- 1 cup Basmati Rice
- 2 tsp Lemon Juice freshly squeezed
Instructions
- Wash the basmati rice thoroughly under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice. Soak the rice in water for 30 minutes, then drain and set aside.
- In a blender or food processor, combine the spinach, cilantro, mint leaves, and green chilies with a little water. Blend until a smooth paste forms. Set aside.
- Heat the cooking oil in a large pot or pressure cooker over medium heat. Add the mustard seeds and let them splutter. This releases their nutty aroma. Then, add the cumin seeds and bay leaves. Sauté until fragrant and lightly browned.
- Add the chopped garlic and sauté until lightly golden. Add the chopped onions and sauté until translucent, about 5-7 minutes. This builds a flavorful base for the pulao.
- Add the chopped green bell peppers and green peas to the pot. Sauté for 2-3 minutes until slightly softened.
- Stir in the spinach paste, garam masala, and salt. Mix well to combine all the flavors.
- Add the drained rice and 3 cups of water to the pot. If using a pressure cooker, seal the lid and cook for 3 whistles. If using a regular pot, bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the water is absorbed.
- Once the rice is cooked, fluff it gently with a fork. Stir in the lemon juice. This adds a touch of brightness and enhances the flavors.
- Serve the vibrant green rice pulao hot. It pairs perfectly with raita, yogurt, or any Indian gravy of your choice.
Recipe Notes
Good To Know
- For an extra layer of flavor, lightly toast the washed and drained rice in a teaspoon of oil before adding the greens puree. This helps keep the grains separate and adds a subtle nutty aroma.
- If you like a bit of crunch, toss in a handful of roasted cashews or slivered almonds just before serving. Their texture balances the softness of the greens and rice beautifully.
- To intensify the tangy note, squeeze a little fresh lemon juice over the pulao right before serving rather than cooking it in. This preserves the citrusy brightness and complements the greens.
- For a vegan version, ensure you use plant-based yogurt or serve with a simple cucumber salad. You can also boost protein by stirring in pan-seared tofu cubes along with the vegetables.
Expert Tips
- Adjust the amount of greens based on your preference. Using milder greens like spinach will result in a subtler flavor, while stronger greens like kale will provide a more pronounced earthy taste.
- Don't overcook the rice. Aim for a light and fluffy texture, not mushy. If using brown rice, increase the cooking time and liquid as needed.
- Freshly grated ginger and garlic can be added along with the greens for a deeper, more aromatic flavor profile.
Storage Instructions
- Allow the pulao to cool completely before storing. Transfer it to an airtight container and refrigerate for up to 3 days.
- To reheat, gently warm the pulao in a pan over medium heat with a splash of water or broth to prevent sticking and drying out.
