Ingredients
For the Rice
- 1 cup Basmati Rice
- 1 cup Water
For the Pulao
- 2 tbsp Refined Oil
- 1 tbsp Ghee
- 1 cup Carrot finely grated
- 1 cup Peas fresh or frozen, green
Spices
- 4 Bay Leaves
- 2 Cinnamon Sticks
- 2 Cardamom Pods black
- 6 Cardamom Pods green
- 1 Star Anise
- 12 Peppercorns black
- 1 tsp Ginger ground
- 1 ½ tsp Salt or to taste
- 2 tsp Rose Water
Instructions
- Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice. In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the rice is parboiled (partially cooked but still slightly firm).
- In a large pan or pot, heat the refined oil over medium heat. Add the bay leaves, cinnamon sticks, black cardamom pods, green cardamom pods, star anise, and black peppercorns. Sauté the spices for a minute or two until fragrant, stirring constantly to prevent burning.
- Add the grated carrots and green peas to the pan. Sauté for 5-7 minutes until the carrots are slightly softened and the peas are bright green.
- Gently fold in the parboiled rice, ground ginger, and desi ghee. Mix well to combine all the ingredients. This adds a rich, nutty flavor to the pulao.
- Sprinkle a little water over the rice, cover the pan tightly, and reduce heat to the lowest setting. Simmer for another 10-12 minutes, or until the rice is fully cooked, fluffy, and the flavors have melded together. Do not lift the lid during this time to allow the steam to cook the rice evenly.
- Remove the pulao from the heat and gently stir in the rose water. This adds a delicate floral aroma and enhances the overall flavor. Fluff the rice with a fork before serving.
