Prepare the Millet

  • Cook little millet according to package directions, using a 3:1 water-to-millet ratio. Once cooked, let cool completely.

Cook the Fish

  • In a saucepan, gently poach the fish fillet in simmering water with minced garlic and salt until cooked through (about 4-5 minutes). Remove from heat and let cool.

Form the Fish and Millet Balls

  • Flake the cooked fish. Combine the cooled millet, flaked fish, spring onions, sesame oil, cayenne pepper, and salt. Mix well. Form mixture into small balls (approximately 1.5 inches in diameter).

Make the Honey-Mustard Sauce

  • In a small saucepan, gently heat the heavy cream over low heat. Stir in the Dijon mustard, honey, garlic powder, and cayenne pepper. Heat until warmed through, do not boil. Remove from heat.

Steam and Serve

  • Steam the fish and millet balls for 2-3 minutes, until heated through. Garnish with charred peas and drizzle generously with the honey-mustard sauce. Serve immediately.
