Ingredients

- 200 gm Fish Fillet haddock, or tilapia; minced, such as cod, white
- 1 Egg white
- 4 tsp Bell Peppers finely chopped, tri-color mix recommended
- 1/2 tsp Thyme finely chopped, fresh
- 1.5 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground
- 1/4 cup Breadcrumb panko breadcrumbs recommended for extra crispiness
- 1/2 cup Vegetable Oil for frying
For the Plum-Kiwi Sauce
- 1 Plum pitted and finely chopped, ripe
- 1 Kiwi peeled and finely chopped
- 1 sprig Rosemary finely chopped, fresh
- 2 Chili finely chopped; adjust to your spice preference, green
- 1/2 tsp Sugar
- 1.5 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground
- 1 tbsp Lime Juice adds brightness to the sauce, freshly squeezed
Instructions
Prepare the Fish Balls
- In a bowl, combine the minced fish, egg white, chopped bell peppers, thyme, salt, and pepper. Mix well to combine.
- Let the mixture rest for 30 minutes in the refrigerator to allow the flavors to meld.
- Gently fold in the breadcrumbs until just combined. Avoid overmixing.
- Roll the mixture into small, even-sized balls.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the fish balls in batches until golden brown and cooked through, about 2-3 minutes per side.
- Remove the fish balls from the skillet and drain on paper towels.
Make the Plum-Kiwi Sauce
- In a small saucepan, combine the chopped plum, kiwi, rosemary, green chili, sugar, salt, pepper, and lime juice.
