Ingredients
Dry Ingredients
- 1 cup Whole Wheat Flour whole
- 1/2 cup Corn Flour
- 3/4 cup Sugar powdered
- 1/4 cup Cocoa Powder unsweetened
- 1/2 tsp Baking Soda helps the cookies rise
- 1/4 tsp Salt
Wet Ingredients
- 220 gm Butter softened, unsalted
- 6 tsp Strong Coffee Decoction mix 1-2 tsp instant coffee with 6 tsp warm water
- 1 tsp Vanilla Extract
Instructions
Preheat & Prep
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Combine Dry Ingredients
- In a medium bowl, whisk together whole wheat flour, corn flour, cocoa powder, baking soda, and salt. Set aside.
Cream Butter and Sugar
- In a large bowl, cream together softened butter and powdered sugar until light and fluffy. Beat in vanilla extract.
Combine Wet and Dry
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the strong coffee decoction until the dough is well blended.
Shape & Bake
- Transfer the dough to a piping bag fitted with a 1M piping tip (or use a spoon for drop cookies). Pipe or drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
