Instructions

Prepare the Dough

  • Combine whole wheat flour, baking soda, and salt in a large bowl. Cut in the softened butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

Mix Wet and Dry

  • In a separate bowl, cream together the powdered sugar and vanilla extract (if using). Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the chocolate chips.

Chill and Shape

  • Cover the dough and refrigerate for at least 30 minutes to firm up. Preheat your air fryer to 160°C (320°F).

Air Fry the Cookies

  • Roll the dough into small balls (about 1 inch in diameter). Slightly flatten each ball. Arrange cookies in a single layer in the air fryer basket, leaving space between each cookie for even cooking. Air fry for 8-10 minutes, or until the edges are lightly golden brown.

Cool and Enjoy

  • Carefully remove the cookies from the air fryer and let them cool completely on a wire rack before serving. Store in an airtight container at room temperature for up to 3 days.

Recipe Notes

Expert Tips

  • For chewier cookies, use less powdered sugar and bake for a shorter time.
  • If your dough is too dry, add a teaspoon of milk at a time until it reaches the desired consistency. If it's too wet, add a tablespoon of flour.
  • Experiment with different mix-ins! Nuts, dried fruits, or other types of chocolate would be delicious additions.
  • Don't overcrowd the air fryer basket; this will ensure even cooking and prevent your cookies from becoming soggy.
