Ingredients
Dry Ingredients
- 1/2 cup Ragi Flour
- 1/2 cup Whole Wheat Flour whole
- 1/2 cup Sugar powdered
- 1/4 tsp Baking Soda optional
- 1 tsp Salt or to taste
- 3 tbsp Cocoa Powder
Wet Ingredients
- 1/2 cup Butter softened, unsalted
- 1 tsp Vanilla Extract
- 2-3 tbsp Milk or as needed to form dough
Instructions
Prepare the Dry Ingredients
- Lightly toast the ragi flour in a dry pan for a few seconds until lightly warm. Let it cool completely. Sift together the ragi flour, whole wheat flour, baking soda (if using), and salt in a large bowl.
Combine Wet and Dry Ingredients
- In a separate bowl, cream together the softened butter and powdered sugar until light and fluffy. Beat in the vanilla extract. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Add milk, a tablespoon at a time, until a soft dough forms. Do not overmix.
Chill and Prepare the Filling
- Refrigerate the dough for at least 15 minutes to firm up. While the dough chills, melt the white chocolate with 2 tablespoons of butter in a double boiler or microwave in short bursts, stirring until smooth. Set aside.
Assemble and Bake the Cookies
- Preheat oven to 170°C (340°F). Line a baking sheet with parchment paper. Roll the dough into small balls. Make a well in the center of each ball. Fill the well with the white chocolate mixture and dried fruits. Gently pinch the edges together to seal, forming a ball again.
Bake and Cool
- Place the cookies onto the prepared baking sheet, leaving some space between each cookie. Bake for 15-18 minutes, or until the edges are set and the cookies are lightly golden. Let the cookies cool completely on a wire rack before serving.
