Activate the Yeast

  • Activate the yeast by combining 2 tbsp warm water, 1 tsp sugar, and the yeast in a small bowl. Stir well, cover, and let stand for 10 minutes until frothy.

Combine Wet Ingredients

  • In a saucepan, gently warm the milk. Stir in the melted butter, sugar, beaten egg, and the activated yeast mixture. Mix thoroughly.

Make the Batter

  • In a large bowl, combine the flour and salt. Gradually add the wet ingredients, mixing until a thick batter forms (similar in consistency to vada batter). Cover the bowl with a clean cloth and let it rise in a warm place for 1-2 hours, or until doubled in size.

Prepare the Coating

  • In a shallow dish, combine the ground cinnamon and 50g of granulated sugar.

Fry or Bake the Doughnuts

  • For frying: Heat the vegetable oil in a deep pan over medium-low heat. Carefully drop spoonfuls of batter into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, turning occasionally. For baking: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Drop spoonfuls of batter onto the baking sheet, leaving space between each doughnut. Bake for 12-15 minutes, or until golden brown.

Coat and Serve

  • Once the doughnuts are cooked, immediately roll them in the cinnamon-sugar mixture while they are still warm. Serve warm and enjoy!
