I was fortunate to receive Gobindobhog rice for this collaboration. Gobindobhog rice lends a distinctive buttery aroma and sticky texture, making it ideal for creating this unique and flavorful appe. It's a staple in many Bengali households, known for its superior quality and traditional use in offerings.

Ingredients
For the Rice Batter
- 1 cup Gobindobhog Rice max health brand recommended
- 1 1/2 cup Water for soaking rice
- 1/2 cup Jaggery finely grated or powdered
- 1/2 cup Coconut freshly grated
- 1 Apple large, peeled and grated
- 1/2 tsp Cinnamon Powder
- 1/2 tsp Salt to taste
- 1 pinch Baking Soda optional, adds fluffiness
For Cooking
- 3 tbsp Ghee clarified butter
- 2 tbsp Vegetable Oil
Instructions
Prepare the Rice Batter
- Soak the Gobindobhog rice in 1 1/2 cups of water for at least 2 hours.
- After soaking, blend the soaked rice, grated coconut, jaggery, and salt in a food processor until a smooth batter forms.
- Transfer the batter to a bowl. Add the cinnamon powder and grated apple. Mix well.
- Let the batter rest for 15 minutes to allow the flavors to meld.
Cook the Guliyappa
- Just before cooking, gently stir in the baking soda (if using).
- Heat a guliyappa/appe pan over medium heat. Mix the ghee and vegetable oil together.
- Lightly grease the appe pan wells with the ghee-oil mixture.
- Pour the batter into each well, filling about ¾ full.
- Cover and cook until the appe are golden brown and cooked through. This may take approximately 5-7 minutes depending on your stovetop.
- During cooking, spoon some of the ghee-oil mixture over the sides of the appe halfway through cooking for extra crispiness. Continue cooking, reversing if needed for even browning.
Serve
- Once cooked, carefully remove the apple cinnamon guliyappa from the pan. Serve hot, optionally drizzled with extra ghee.

- For extra fluffy appe, use freshly grated coconut for maximum moisture.
- Adjust the amount of jaggery to your preference for sweetness. You can also substitute with sugar if preferred.

- Don't overcrowd the appe pan; ensure each well is adequately filled without overflowing for even cooking.
