  • Rinse the flat rice under cold water and drain. Set aside.
  • In a large pot, bring the milk to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until the milk reduces to about 250g. This concentrates the milk's flavor and creates a richer kheer.

  • Add the coconut sugar, cardamom powder, fresh coconut paste, and chopped dried fruits to the reduced milk. Stir well to combine.
  • Gently fold in the drained flat rice. Continue to cook, stirring constantly, until the mixture thickens slightly, ensuring the flat rice doesn't stick to the bottom of the pot.
  • Remove the kheer from the heat and set aside.
  • In a separate pan over medium heat, add the mawa, granulated sugar, and refined flour. Stir continuously until the mixture thickens and forms a dough-like consistency.
  • Remove the mawa mixture from the heat and let it cool slightly.
  • Divide the mawa mixture into small portions. Shape each portion into a ball, creating a small well in the center.
  • Fill each well with a pinch of chopped dried fruits, a pinch of cardamom powder, and a few crystals of granulated sugar.
  • Close the mawa balls, ensuring the filling is sealed inside. Roll each ball in coconut sugar to coat.
  • To serve, spoon the prepared kheer into bowls. Place a few mawa balls on top of each serving. Garnish with pistachios.
  • Serve warm or chilled and enjoy!

  • For a richer texture, lightly toast the flat rice (poha) in ghee before adding it to the milk; this deepens the flavor and prevents the rice from becoming too mushy.
