Ingredients
For the Dosa Bhaji
- 200 gm Potato boiled, roughly mashed
- 1 Drumstick about 1 medium drumstick, cut into 2-inch pieces
- 1 Onion medium, thinly sliced
- 0.75 tsp Turmeric Powder also known as haldi
- 1 tsp Sambar Powder
- 1.5 tsp Salt or to taste
- 1 tsp Ginger finely chopped
- 2 Chili green, slit lengthwise
- 2 tbsp Coriander freshly chopped cilantro
- 15 gm Tamarind soaked in 1/4 cup warm water for 15 minutes, then pulp extracted
- 1/2 cup Water or as needed for desired consistency
- 1 tbsp Tomato Puree adds depth of flavour
For Tempering
- 3 tbsp Ghee clarified butter
- 0.5 tsp Mustard Seeds also known as rai
- 1 sprig Curry Leaves
- 0.25 tsp Cumin Seeds
- 0.5 tsp Asafoetida also known as hing
Instructions
Prepare the Tempering
- Heat ghee in a pan. Add mustard seeds, cumin seeds, curry leaves, and asafoetida. Sauté until the mustard seeds splutter.
Sauté the Aromatics
- Add sliced onions and sauté for about a minute until softened. Then, add the slit green chilies and chopped ginger. Stir and cook for another minute until fragrant.
Add the Spices and Vegetables
- Add turmeric powder and sambar powder. Mix well and cook for 30 seconds, stirring constantly to prevent burning. Add the tomato puree and cook for a further minute.
Simmer the Bhaji
- Pour in water (or add more as needed), bring to a boil, and then add the drumstick pieces and salt. Reduce the heat to a simmer, and let it cook for about 10-12 minutes, or until the drumsticks are tender.
Finish and Serve
- Stir in the mashed potatoes and tamarind pulp. Simmer for another 3-5 minutes. Garnish with fresh coriander leaves. Serve hot with dosas or idlis.
