Instructions

Prepare the Tempering

  • Heat ghee in a pan. Add mustard seeds, cumin seeds, curry leaves, and asafoetida. Sauté until the mustard seeds splutter.

Sauté the Aromatics

  • Add sliced onions and sauté for about a minute until softened. Then, add the slit green chilies and chopped ginger. Stir and cook for another minute until fragrant.

Add the Spices and Vegetables

  • Add turmeric powder and sambar powder. Mix well and cook for 30 seconds, stirring constantly to prevent burning. Add the tomato puree and cook for a further minute.

Simmer the Bhaji

  • Pour in water (or add more as needed), bring to a boil, and then add the drumstick pieces and salt. Reduce the heat to a simmer, and let it cook for about 10-12 minutes, or until the drumsticks are tender.

Finish and Serve

  • Stir in the mashed potatoes and tamarind pulp. Simmer for another 3-5 minutes. Garnish with fresh coriander leaves. Serve hot with dosas or idlis.

Recipe Notes

Expert Tips for the Perfect Dosa Bhaji

  • For a richer flavor, use homemade sambar powder.
  • Adjust the amount of green chilies according to your spice preference.
  • Don't overcook the potatoes; slightly mashed potatoes hold their shape better in the bhaji.
  • If the bhaji becomes too thick, add a little more water to adjust the consistency.
