Ingredients
For the Gulab Jamun Dough
- 1 cup Mawa dried milk solids
- 1/2 cup All-Purpose Flour
- 1 tbsp Milk
For the Sugar Syrup
- 1 1/2 cup Sugar
- 2 1/2 cup Water
- 1/4 tsp Cardamom Powder
For Frying
- 2 cup Ghee

- 15-20 Raisins
Instructions
- In a mixing bowl, crumble the mawa.
- Gently mix in the all-purpose flour and milk. Knead until a soft, pliable dough forms. Avoid overkneading, as this can make the gulab jamun tough. Cover the dough and let it rest for at least 15 minutes. This allows the gluten to relax, resulting in softer gulab jamun.
- Divide the dough into 18-20 equal portions. Roll each portion between your palms to create smooth, crack-free balls. Ensure there are no cracks, as this can cause them to break apart while frying.
- In a saucepan, combine the sugar, water, and cardamom powder. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves completely. Simmering the syrup gently prevents it from crystallizing later.
- Heat the desi ghee in a deep frying pan or kadai over medium-low heat. Gently slide the gulab jamun balls into the hot ghee. Do not overcrowd the pan. Fry the gulab jamun in batches, ensuring they cook evenly.
- Fry the gulab jamun, turning them occasionally, until they achieve a deep golden brown color. This slow frying process ensures the gulab jamun cook through completely.
- Once fried, remove the gulab jamun from the ghee and gently place them directly into the warm sugar syrup. Allow the gulab jamun to soak in the syrup for at least 1 hour before serving. This allows the syrup to penetrate the gulab jamun, making them incredibly soft and flavorful.
- Garnish with raisins, if desired. Serve warm and enjoy!
