- 1 Carrot finely chopped, medium
- 1/2 cup Peas frozen
- 1 bunch Spring Onions finely chopped, white and green parts separated
Aromatics & Seasonings
Other
- 6 Eggs
- 4 tbsp Vegetable Oil
Instructions
Prepare the Chicken
- Clean and cut the chicken breast into bite-sized pieces. Heat 2 tbsp oil in a pan or wok over medium-high heat. Add the chicken, 1/2 tsp salt, and 1/2 tsp pepper. Cook until browned and cooked through, about 6 minutes. Remove from pan and set aside.
Cook the Eggs
- Whisk the eggs with a pinch of salt and pepper in a bowl. Heat the remaining 2 tbsp oil in the pan. Add the eggs and cook, stirring gently, until mostly set but still slightly moist. Remove from pan and set aside.
Prepare the Vegetables
- Finely chop the onion, carrot, and spring onions (separate white and green parts). Mince the ginger and garlic.
Sauté the Vegetables
- Heat the oil in a wok or large pan over medium-high heat. Add the white parts of the spring onions and sauté for 1 minute. Add the onion and carrot and sauté for 2-3 minutes. Then add the minced garlic and ginger, and sauté for another minute until fragrant.
Add Remaining Ingredients
- Stir in the frozen peas and cook for 1 minute. Add the cooked rice, chicken, and scrambled eggs to the wok. Add the soy sauce, allspice, salt, and pepper. Stir-fry for 2-3 minutes until well combined and heated through.
Garnish and Serve
- Garnish with the green parts of the spring onions and serve hot.
Recipe Notes
Expert Tips for the Perfect Chicken Fried Rice
- Use day-old rice: Day-old rice is drier and less likely to become mushy when stir-fried. If you don't have day-old rice, spread fresh cooked rice on a baking sheet to cool and dry it out slightly before use.
- Don't overcook the vegetables: Slightly crisp-tender vegetables are ideal for fried rice, adding texture and vibrant color. Overcooked vegetables will make the dish soggy.
- High heat is key: Stir-frying at high heat helps create a delicious wok hei (smoky flavor). Make sure your wok or pan is hot before adding ingredients.
- Adjust seasonings to taste: This recipe is a guideline; feel free to adjust the amounts of salt, pepper, and soy sauce to suit your preferences.
