  • 0.5 cup Cashews
  • 1 tbsp Ghee optional

Preparing the Mushroom Curry

  • Heat oil in a pan or kadhai over medium heat. Add chopped onions and green chillies and sauté until softened.
  • Add chili powder, garam masala, turmeric powder, and salt. Mix well.
  • Add sliced mushrooms and cook, stirring occasionally, until mushrooms are tender (about 15-20 minutes). Cover and cook for 5 minutes at intervals to ensure even cooking.
  • Stir in yogurt and cook for another 2 minutes.

Making the Fried Rice

  • Heat oil in a separate pan or wok over medium heat.
  • Add cashews and fry until light golden brown.
  • Add the prepared mushroom curry and mix well with the cashews.
  • Add cooked rice (ideally day-old rice) to the pan and stir to combine. Add ghee (optional) for extra flavor.
  • Season with additional salt to taste if needed.
