- 200 gm Mushrooms washed and sliced
- 1 Onion finely chopped
- 3 Chillies finely chopped, green
- 3 tbsp Oil
- 1.5 tsp Salt
- 0.5 tsp Turmeric Powder
- 1 tsp Chili Powder
- 0.5 tsp Garam Masala
- 1 tbsp Yogurt
Instructions
Preparing the Mushroom Curry
- Heat oil in a pan or kadhai over medium heat. Add chopped onions and green chillies and sauté until softened.
- Add chili powder, garam masala, turmeric powder, and salt. Mix well.
- Add sliced mushrooms and cook, stirring occasionally, until mushrooms are tender (about 15-20 minutes). Cover and cook for 5 minutes at intervals to ensure even cooking.
- Stir in yogurt and cook for another 2 minutes.
Making the Fried Rice
- Heat oil in a separate pan or wok over medium heat.
- Add cashews and fry until light golden brown.
- Add the prepared mushroom curry and mix well with the cashews.
- Add cooked rice (ideally day-old rice) to the pan and stir to combine. Add ghee (optional) for extra flavor.
- Season with additional salt to taste if needed.
