Ingredients
For the Rice
- 250 gm Long-Grain Rice
- 1 tsp Salt
- 2 tbsp Sesame Oil
For the Chicken Fried Rice
- 2 tbsp Vegetable Oil or other neutral cooking oil
- 2 tsp Garlic Paste
- 100 gm Spring Onions finely chopped, white and light green parts
- 1 cup Chicken boneless, cooked, cut into thin strips
- 1 Egg lightly whisked
- 1 stalk Celery finely chopped
- 1 Carrot blanched and refreshed, diced, small
- 2 tbsp Soy Sauce
- 1 tsp Rice Vinegar
- 1 tsp Chili Garlic Sauce or to taste
- 500-600 ml Water for cooking rice; adjust according to rice type, hot
For Garnish
- 2 tbsp Spring Onion Greens finely chopped
Instructions
Prepare the Rice
- Cook the rice according to package directions, using 500-600ml of hot water, 1 tsp salt, and 1 tbsp sesame oil. The rice should be cooked but still slightly firm.
- Drain the rice thoroughly and rinse under cold water until cool. Set aside.
Sauté Aromatics and Chicken
- Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the garlic paste and white/light green parts of spring onions; stir-fry until fragrant and onions are translucent.
- Add the cooked chicken strips and stir-fry for 2-3 minutes, until heated through. Push the chicken to the side of the pan.
Add Egg and Vegetables
- Crack the egg into the wok and scramble lightly. Add the diced carrots and celery; stir-fry for 1-2 minutes.
Combine and Season
- Stir in soy sauce, rice vinegar, and chili garlic sauce. Add the cooked rice and toss everything together until well combined and heated through.
Garnish and Serve
- Garnish with chopped spring onion greens. Serve hot, accompanied by a side of omelette and cucumber slices.
