Prepare the Rice

  • Cook the rice according to package directions, using 500-600ml of hot water, 1 tsp salt, and 1 tbsp sesame oil. The rice should be cooked but still slightly firm.
  • Drain the rice thoroughly and rinse under cold water until cool. Set aside.

Sauté Aromatics and Chicken

  • Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the garlic paste and white/light green parts of spring onions; stir-fry until fragrant and onions are translucent.
  • Add the cooked chicken strips and stir-fry for 2-3 minutes, until heated through. Push the chicken to the side of the pan.

Add Egg and Vegetables

  • Crack the egg into the wok and scramble lightly. Add the diced carrots and celery; stir-fry for 1-2 minutes.

Combine and Season

  • Stir in soy sauce, rice vinegar, and chili garlic sauce. Add the cooked rice and toss everything together until well combined and heated through.

Garnish and Serve

  • Garnish with chopped spring onion greens. Serve hot, accompanied by a side of omelette and cucumber slices.
