Instructions

Prepare the Dough

  • Sieve the whole wheat flour and salt together. Gradually add the water while kneading to form a smooth, pliable dough. Cover the dough with a damp cloth and let it rest for at least 15 minutes.

Make the Potato Filling

  • Mash the boiled potatoes thoroughly. Mix in the red chili powder, green chili, cumin powder (optional), garam masala (optional), and salt. Mix well to combine. Divide the potato mixture into 4 equal portions.

Assemble the Parathas

  • Divide the dough into 8 equal portions. Roll each portion into a small ball. Flatten one ball, place a portion of the potato mixture in the center, and gently bring the edges of the dough together to enclose the filling, shaping it into a ball again.

Roll and Cook the Parathas

  • Flatten the filled dough balls and roll them into 6-7 inch diameter circles. Sprinkle a little flour to prevent sticking.

Cook on the Tawa

  • Heat a flat griddle or tawa over medium heat. Place a paratha on the hot surface and cook for about 3 minutes per side, or until lightly browned. Add 1/2 tablespoon of butter or oil to each side and continue to cook on low heat until golden brown and crispy.

Serve

  • Serve hot Aloo Bhare Parathas with yogurt, chutney, or pickle.

Recipe Notes

Expert Tips for Perfect Aloo Bhare Parathas

  • For extra flavor, add finely chopped onions and cilantro to the potato filling.
  • If the dough is too sticky, add a little more flour; if it's too dry, add a teaspoon of water at a time.
  • Don't overcrowd the pan when cooking the parathas. Cook them in batches to ensure even browning.
  • For a crispier paratha, cook it on medium-high heat for a shorter time, flipping frequently.
