Ingredients
Crust
- 100 gm Whole Wheat Flour whole
- 60 gm Butter
- 60 gm Sugar brown, organic
- 2 tbsp Honey
- 1 tsp Chocolate Extract
- 3 tbsp Milk
- 1/8 tsp Salt
- 1/2 tsp Baking Soda
Filling
- 125 gm Chocolate lindt, dark
- 60 gm Heavy Cream
- 20 gm Cocoa Powder unsweetened
Topping (Optional)
Instructions
- Cream together the softened butter and brown sugar until light and fluffy. This incorporates air for a tender crust.
- Add the honey and chocolate extract. Mix thoroughly.
- In a separate bowl, whisk together the whole wheat flour, baking soda, and salt. Sifting helps to aerate the dry ingredients, resulting in a lighter crust.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Add milk, 1 tablespoon at a time, until a soft dough forms. Do not overmix, as this can develop the gluten and make the crust tough.
- Preheat the oven to 350°F (175°C).
- Grease tartlet molds and lightly dust with flour. Press the dough into the prepared molds.
- Prick the bottom of the tart shells with a fork. This prevents the dough from puffing up during baking. Bake for 15 minutes, or until lightly golden.
- In a saucepan, combine the heavy cream and butter. Heat over medium heat, bringing to a simmer. Remove from heat.
- Add the chopped dark chocolate and honey to the hot cream mixture. Stir until the chocolate is completely melted and the mixture is smooth.
- Let the chocolate filling cool for 30 minutes, or until thickened.
- Transfer the chocolate filling to a piping bag or use a spoon to fill the cooled tart shells.
- Garnish with silver sprinkles, if desired.
Recipe Notes
Good To Know
- Butter should be at room temperature for preparing the dough.
- Tarts will be soft when hot and crisp once completely cool.
- Let the chocolate filling cool completely before piping it into the tartlet for optimal texture.
- If the dough is dry, add 1 tablespoon of milk at a time while kneading.
- If the dough is too soft, refrigerate it for 15-20 minutes before handling.
- Regular white sugar can be substituted for brown sugar.
- If using unsweetened cocoa powder and dark chocolate, add honey or sugar for sweetness. If using chocolate compound, no additional sweetener is needed.
- Omit salt if using salted butter.
- For a crunchier tart base, add a tablespoon of finely chopped toasted nuts (like almonds or hazelnuts) to the flour.
- For a vegan version, use full-fat coconut milk instead of cream, maple syrup or agave instead of honey, and ensure the dark chocolate is dairy-free.
- Gently tap the tart pan on the counter after filling to remove air bubbles.
- Top with flaky sea salt or a drizzle of honey before serving.
Expert Tips
- Use a high-quality dark chocolate for the best flavor and texture.
- Blind-bake the tart shell for a crispier crust. Line the unbaked crust with parchment paper and fill with pie weights or dried beans. Bake for 10-12 minutes, then remove the weights and parchment and bake for another 5-7 minutes.
- For a professional finish, use a piping bag with a decorative tip to fill the tart shells with the chocolate ganache.
Storage Instructions
- Store leftover tarts in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
