Prepare the Paalada

  • Boil the milk in a medium saucepan over medium heat. Add the paalada rice flakes and cook until soft, stirring occasionally to prevent sticking.

Make the Butterscotch Chocolate Sauce

  • In a heavy-bottomed saucepan, heat the brown sugar over medium heat for 5 minutes, stirring constantly until melted and a light caramel color develops. Be careful not to burn the sugar.
  • Slowly and carefully add the water to the melted sugar, as it will sputter. Stir constantly until the sugar and water are completely combined and smooth.
  • Reduce heat to low. Stir in the butter and heavy cream, cooking for 2 minutes until smooth and combined.
  • Remove from heat. Add the chopped dark chocolate and stir until melted and fully incorporated into the butterscotch sauce.

Combine and Finish

  • Add the butterscotch chocolate sauce to the cooked paalada. Stir gently to combine thoroughly.
  • Cook the mixture for 5 minutes over medium heat, stirring gently to prevent sticking.
  • Remove from heat and let cool completely before serving.
  • Garnish with grated white chocolate before serving.
