Ingredients
For the Payasam
- 1/4 cup Paalada Rice Flakes
- 0.5 ltr Milk boiled, whole milk
- 1/2 cup Sugar brown, packed; can substitute with white sugar or jaggery
- 100 gm Chocolate 70% cacao or higher recommended, dark, finely chopped
- 1/4 cup Water
- 1 tbsp Butter unsalted
- 4 tbsp Heavy Cream
For Garnishing
- 2 tbsp Chocolate finely grated, white
Instructions
Prepare the Paalada
- Boil the milk in a medium saucepan over medium heat. Add the paalada rice flakes and cook until soft, stirring occasionally to prevent sticking.
Make the Butterscotch Chocolate Sauce
- In a heavy-bottomed saucepan, heat the brown sugar over medium heat for 5 minutes, stirring constantly until melted and a light caramel color develops. Be careful not to burn the sugar.
- Slowly and carefully add the water to the melted sugar, as it will sputter. Stir constantly until the sugar and water are completely combined and smooth.
- Reduce heat to low. Stir in the butter and heavy cream, cooking for 2 minutes until smooth and combined.
- Remove from heat. Add the chopped dark chocolate and stir until melted and fully incorporated into the butterscotch sauce.
Combine and Finish
- Add the butterscotch chocolate sauce to the cooked paalada. Stir gently to combine thoroughly.
- Cook the mixture for 5 minutes over medium heat, stirring gently to prevent sticking.
- Remove from heat and let cool completely before serving.
- Garnish with grated white chocolate before serving.
