Instructions

  • In a pan, heat ½ teaspoon of oil. Add the chopped onion and sauté until translucent. This builds a flavor base for the pakoras.

  • Gently combine the sautéed onions (and other vegetables, if using) with the cooked Maggi noodles.
  • In a bowl, mix the corn flour and salt. Add this mixture to the Maggi and vegetable mixture. Combine thoroughly. The corn flour acts as a binding agent, helping the pakoras hold their shape.
  • Heat oil in a wok or deep fryer over medium-high heat. The oil is ready when a small piece of the Maggi mixture sizzles immediately upon contact.
  • Carefully drop spoonfuls of the Maggi mixture into the hot oil. Avoid overcrowding the pan. Fry in batches if necessary.
  • Fry the pakoras until golden brown and crispy, flipping them halfway through. This ensures even cooking and a beautiful color.
  • Remove the pakoras from the oil and place them on a plate lined with absorbent paper to drain excess oil. Serve hot with your favorite dipping sauce or ketchup.

Recipe Notes

Expert Tips

  • For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
  • Adjust the spice level to your preference by adding more or less chili powder.
  • If you don't have fresh cilantro on hand, you can substitute with parsley or omit it altogether.

Storage Instructions

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or on the stovetop.
