Ingredients
Spinach Mixture
Aromatics
- 2 Tbsp Onion Paste
- 1 tsp Garlic Paste
- 1 Tbsp Ginger Paste
- 1 Tbsp Chili Paste green
- 1 Tbsp Cumin Seeds ground, roasted
Other Ingredients
- 2 Tbsp Couscous
- 1 tsp Dry Mango Powder dry mango powder
- 2 Tbsp Oil for shallow frying
- 1 1/2 tsp Salt or to taste
- 1 tsp Chaat Masala
Instructions
- Blanch the spinach leaves in boiling water until wilted. This helps retain their vibrant green color. Immediately plunge the spinach into ice water to stop the cooking process. Puree the spinach until smooth.
- In a large mixing bowl, combine the mashed potatoes, green chili paste, ground roasted cumin seeds, salt, spinach puree, and amchur (dry mango powder). Mix well.
- Gradually add the ground roasted chickpeas and semolina to the mixture. The semolina acts as a binding agent, helping the tikkis hold their shape.
- Spread the couscous on a plate. Form the spinach mixture into small patties, about 1 tablespoon each. Coat each tikki evenly with couscous, ensuring both sides are covered.
- Heat the oil in a large frying pan over medium heat. Make sure the oil is hot enough to prevent the tikkis from sticking.
- Carefully place the tikkis in the hot oil, ensuring not to overcrowd the pan. Shallow fry for a few minutes on each side, until golden brown and crispy.
- Remove the tikkis from the pan and place them on a plate lined with paper towels to absorb excess oil.
- Sprinkle the tikkis with chaat masala for an extra layer of flavor. Serve hot and enjoy!
Recipe Notes
Good To Know
- These tikkis are enjoyable on their own, with tea or coffee.
- For extra crispiness, lightly coat the tikkis in additional semolina or cornmeal before pan-frying.
- To enhance nutrition and color, add finely grated carrots or beetroot to the mixture.
- Serve with mint-coriander chutney or a spiced yogurt dip.
Expert Tips
- Don't overmix the tikki mixture, as this can make them tough. Gently combine the ingredients until just combined.
- Ensure the oil is hot enough before adding the tikkis to prevent them from absorbing too much oil and becoming greasy.
- For a healthier option, bake the tikkis in a preheated oven at 400°F (200°C) for about 20-25 minutes, flipping halfway through.
Storage Instructions
- If preparing ahead, shape and partially cook the tikkis, then freeze them on a tray before transferring to an airtight container. Reheat directly from frozen in a hot skillet.
