Ingredients
For the Filling
- 4 Potato and grated, boiled, peeled
- 1 Onion large, finely chopped
- 1 tsp Ginger grated
- 2 tbsp Coriander chopped
- 1/4 tsp Asafoetida hing
- 1 tbsp Fennel Seeds ground, saunf
- 1 tbsp Chili Powder
- 1 tsp Turmeric haldi
- 1 tbsp Mango Powder amchur, dry
- 1 1/2 tsp Salt or to taste
For the Chilies
- 9 Chili large, green, light green in color
For the Batter
- 2 cup Gram Flour besan
- 1 tsp Carom Seeds ajwain
- 1/2 tsp Turmeric haldi
- 1 tsp Salt or to taste
- 1/4 tsp Baking Soda
- 1 cup Water or as needed to make a thick batter
For Frying
- Oil for deep frying
Instructions
- In a pan, heat 1 teaspoon of oil. Add the asafoetida and sauté the chopped onion until softened. Add the grated potatoes, ginger, cilantro, ground fennel seeds, chili powder, turmeric powder, dry mango powder, and salt. Mix well and set aside.
- Slit each green chili lengthwise, being careful not to cut all the way through. Blanch the chilies in boiling water for 2-3 minutes to soften them. This makes them pliable for stuffing and reduces their raw heat. Drain the chilies and set aside.
- In a bowl, whisk together the gram flour, carom seeds, turmeric powder, salt, and baking soda. Gradually add water, whisking constantly, until a thick batter forms. The batter should coat the back of a spoon.
- Heat oil in a deep fryer or large pot. Gently stuff each chili with the potato filling. Dip the filled chilies in the batter, ensuring they are fully coated.
- Carefully place the battered chilies in the hot oil. Fry them in batches, turning occasionally, until they are golden brown and crispy. Frying in batches prevents the oil temperature from dropping too low, ensuring even cooking.
- Remove the fried Mirchi Bada from the oil and drain on absorbent paper to remove excess oil. Serve hot with your favorite green chutney or sauce.
