  • Heat the oil in a pan over medium heat. Add the cumin seeds and sesame seeds. Sauté for about 30 seconds until fragrant.
  • Add the halved green chilies and garlic cloves to the pan. Sauté for 5-7 minutes, until the chilies soften and the garlic becomes fragrant. Be careful not to burn the garlic, as this will impart a bitter flavor.
  • Stir in the chopped coriander and dry coconut powder. Sauté for another 2-3 minutes until the coriander wilts and the coconut is lightly toasted. This enhances the overall flavor of the chutney.
  • Transfer the mixture to a mortar and pestle. Grind to a coarse paste. Alternatively, you can use a food processor for a quicker, smoother result, but the traditional method yields a more desirable texture.
  • Season with salt to taste. Mix well to combine.
  • Serve the Hirvi Mirchi Cha Thecha immediately with bhakri or roti. It also makes a delicious accompaniment to rice, dal, or vegetables.
