Instructions

Prepare the Chili Filling

  • Wash and slit the green chilies lengthwise, leaving them mostly intact. Boil and mash the potatoes. In a bowl, combine the mashed potatoes with asafoetida, red chili powder, coriander powder, fennel seeds, chaat masala, and salt. Mix well. Stuff the potato mixture into the slit green chilies.

Prepare the Batter

  • In a separate bowl, whisk together the gram flour, water, salt, and red chili powder until you achieve a smooth, slightly thick batter. The consistency should be similar to pancake batter.

Air Fry the Mirchi Vada

  • Preheat your air fryer to 180°C (350°F). Lightly grease pieces of foil with oil. Dip each stuffed chili into the batter, ensuring it's fully coated. Place the battered chilies on the prepared foil. Air fry for 15-20 minutes, flipping halfway through, until golden brown and crispy. Adjust cooking time based on your air fryer and desired crispiness.

Serve

  • Once cooked, carefully remove the Mirchi Vada from the air fryer. Serve hot with your favorite chutney or sauce.

Recipe Notes

Expert Tips for Perfect Mirchi Vada

  • For extra flavor, soak the gram flour in water for 30 minutes before making the batter.
  • Adjust the amount of red chili powder to control the spice level according to your preference.
  • Don't overcrowd the air fryer basket; work in batches for even cooking and maximum crispiness.
  • Experiment with different fillings! Try adding finely chopped onions or paneer to the potato mixture for added texture and flavor.
