  • 1 1/2 cup All-Purpose Flour maida
  • 3 tbsp Oil for the dough
  • 3/4 cup Water add more as needed to achieve desired dough consistency, approximately

  • 2 cup Oil for deep frying

Prepare the Filling

  • Grind the soaked urad dal with green chilies, salt, red chili powder, ginger paste, asafoetida, coriander powder, cumin seeds, and fennel seeds into a smooth paste. Set aside.

Make the Dough

  • In a large bowl, combine the all-purpose flour and oil. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic.

Assemble and Fry the Puris

  • Divide the dough into small, equal-sized balls. Roll each ball into a thin, round circle (approximately 4 inches in diameter). Add a spoonful of the urad dal filling to the center of each circle. Gently fold the dough over the filling, and seal the edges to form a half-moon shape. Gently flatten again into a puri.

Deep Fry the Puris

  • Heat oil in a deep pan or kadai over medium-high heat. Carefully place the puris in the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and puffed up on both sides. Remove the puris and drain on paper towels.

Serve
