Ingredients
For the Vadai Batter
- 1 cup Split Chickpea split chickpeas; soak in water for at least 1 hour
- 1.5 tbsp Semolina sooji; helps bind the batter
- 1 Onion medium, finely chopped
- 2 Chili finely chopped; adjust to your spice preference, green
- 1 tsp Ginger finely grated
- 6 clove Garlic minced
- 1 tbsp Fennel Seeds saunf, coarsely ground
- 1.5 tsp Salt or to taste
- 1/2 tsp Turmeric Powder for color and flavor
For Frying
- 1.5 cup Oil for deep frying; use a neutral oil with a high smoke point, such as canola or vegetable oil
Instructions
Prepare the Chana Dal
- Soak 1 cup of chana dal in water for at least 1 hour, or until softened.
Grind the Spices
- Coarsely grind 1 tbsp of fennel seeds, 6 cloves of garlic, and 1 tsp of ginger together. Do not add water.
Make the Vadai Batter
- Drain the soaked chana dal and coarsely grind it in a blender or food processor. Do not make a fine paste; a slightly coarse texture is desired.
- In a large bowl, combine the ground chana dal, ground spice mixture, 1 medium finely chopped onion, 2 finely chopped green chilies, 1.5 tsp salt, 1/2 tsp turmeric powder, and 1.5 tbsp semolina. Mix well to form a slightly thick batter.
Fry the Vadas
- Heat 1.5 cups of oil in a deep, heavy-bottomed pan or kadai over medium heat. Once the oil is hot (a pinch of batter should sizzle immediately), carefully drop spoonfuls of the batter into the hot oil. Gently flatten each spoonful with the back of a spoon to form small, round vadas.
Cook the Vadas
- Fry the vadas in batches, ensuring not to overcrowd the pan. Fry until they turn golden brown and crispy, flipping halfway through. This should take about 3-4 minutes per side.
Drain and Serve
- Remove the fried vadas from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite chutney or sambar.
