Inspired by a summer abundance of mangoes, I created this delightful Oats & Muesli Tart with Mango Yogurt. Its refreshing mango flavor and wholesome ingredients make it a perfect summer breakfast or snack, and a popular seller at my market stall!
The crunchy oat and muesli crust, studded with mixed dried fruits and seeds, contrasts beautifully with the cool, creamy mango yogurt filling. Each bite is both indulgent and nutritious, offering a satisfying and healthy treat.

Prepare the Crust

  • Combine rolled oats, muesli, mixed dried fruits, pumpkin seeds, and sunflower seeds in a food processor. Pulse until finely ground but not powdery.
  • Add melted butter and molasses to the dry ingredients. Pulse until a crumbly mixture forms.
  • Transfer the mixture to a bowl and use your hands to gently press it together until it forms a cohesive dough. Add a little warm water if needed to bind.

Assemble and Bake

  • Lightly grease 6 small tart tins with canola oil.
  • Press the oat mixture firmly into the tart tins, creating an even crust.
  • Bake in a preheated oven at 180°C (350°F) for 8-10 minutes, or until lightly golden brown.
  • Let the tarts cool completely.

Fill and Garnish

  • Once cool, fill each tart with mango yogurt using a piping bag or spoon.
  • Top with fresh mango chunks and remaining dried fruits.
