Chana Dal Batter

Prepare the Chana Dal

  • Wash the chana dal thoroughly, 2-3 times, and soak in ample water for at least 5 hours. Drain the water and coarsely grind the dal using a food processor or blender. Add approximately 4-5 tablespoons of water while grinding to achieve a coarse consistency.

Create the Kachri Batter

  • Transfer the ground dal to a bowl. Using your hands, vigorously whisk the batter for about 1 minute to ensure a smooth, even consistency. Add all remaining ingredients (except oil) and mix well to combine.

Rest and Fry

  • Let the batter rest for 10 minutes. Heat sufficient oil in a deep pan or wok over medium-high heat. Once hot, carefully drop small spoonfuls of the batter into the oil, ensuring not to overcrowd the pan.

Finish and Serve

  • Fry the Kachri until they turn a deep reddish-brown color and become crispy. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite chutney.
