- 1 cup Split Chickpea split chickpeas
- 1 tsp Ginger finely chopped
- 2 Chili finely chopped, green
- 2 Chili deseeded and finely chopped, dried, red
- 1/2 cup Onion but recommended), finely sliced (optional

- 1/4 tsp Carom Seed carom seeds, lightly crushed
- 3/4 tsp Cumin Seeds

- 1 1/2 tsp Coriander Seeds crushed
- 1/2 tsp Salt to taste

- Oil as needed, for deep frying (vegetable or canola recommended)
Instructions
Prepare the Chana Dal
- Wash the chana dal thoroughly, 2-3 times, and soak in ample water for at least 5 hours. Drain the water and coarsely grind the dal using a food processor or blender. Add approximately 4-5 tablespoons of water while grinding to achieve a coarse consistency.
Create the Kachri Batter
- Transfer the ground dal to a bowl. Using your hands, vigorously whisk the batter for about 1 minute to ensure a smooth, even consistency. Add all remaining ingredients (except oil) and mix well to combine.
Rest and Fry
- Let the batter rest for 10 minutes. Heat sufficient oil in a deep pan or wok over medium-high heat. Once hot, carefully drop small spoonfuls of the batter into the oil, ensuring not to overcrowd the pan.
