Ingredients
For the Chickpea Batter
- 1 cup Chickpeas also known as white chickpeas, kabuli chana, chana, dried, or chole. soak overnight or for at least 7-8 hours.
- 1 tsp Cumin Seeds also known as jeera.
- 1-2 Chilies roughly chopped; adjust quantity to your spice preference. also known as hari mirch., green
- 1/2 tsp Asafoetida a pinch is also acceptable., hing
- 1 inch Ginger roughly chopped. also known as adrak.
- 1 medium Onion finely chopped. also known as pyaaz.
- 1/4 cup Coriander finely chopped. also known as dhania.
- 1 tsp Coriander Powder also known as dhania powder.
- 1/2 tsp Pepper crushed. also known as kali mirch., black
- 1/2 tsp Sugar optional, adds a subtle sweetness.
- 1 1/2 tsp Salt adjust to taste.
- 1 3/4 tbsp Rice Flour helps bind the batter.
For Frying
- Vegetable Oil for deep or shallow frying.
Instructions
Prepare the Chickpeas
- Rinse the dried chickpeas thoroughly and soak them in plenty of water overnight or for at least 7-8 hours.
- Drain the soaked chickpeas completely.
Grind the Chickpea Mixture
- Add the drained chickpeas, cumin seeds, green chilies, ginger, and asafoetida to a food processor or blender.
- Grind to a coarse mixture; avoid adding water unless absolutely necessary to aid grinding. A slightly coarse texture is ideal.
- Transfer the ground mixture to a bowl.
Combine Ingredients
- Add the finely chopped onion, coriander leaves, coriander powder, crushed black pepper, rice flour, sugar, and salt to the chickpea mixture.
- Mix everything thoroughly until well combined.

- Heat vegetable oil in a deep or shallow pan over medium-high heat.
