Ingredients
For the Vada Batter
- 1 cup Split Chickpea split chickpeas, also known as bengal gram
- 1 Beetroot peeled and roughly chopped, medium
- 2 tbsp Rice Flour
- 1 tsp Ginger Garlic Paste
- 1 medium Onion finely chopped
- 10-12 Curry Leaves
- 1-2 Chilies finely chopped, adjust to taste, green
- 1 tsp Fennel Seeds
- 1.5 tsp Salt adjust to taste
For Frying
- Oil for deep frying
Instructions
Prepare the Chana Dal
- Soak 1 cup of chana dal in water for at least 4 hours, or preferably overnight.
- Drain the soaked chana dal and blend it into a smooth paste in a mixer grinder.
Combine the Batter Ingredients
- Add the blended chana dal to a large bowl. Incorporate the peeled and chopped beetroot, ginger-garlic paste, finely chopped onions, curry leaves, green chilies, fennel seeds, and salt.
- Mix everything thoroughly until well combined. Gradually add the rice flour, mixing until a thick, slightly sticky batter forms.
Shape and Fry the Vadas
- Heat oil in a deep frying pan or kadai to medium-high heat.
- Take small portions of the batter and carefully shape them into small, flat patties (vadas).
- Gently slide the vadas into the hot oil, ensuring not to overcrowd the pan.
- Fry the vadas, turning occasionally, until they are golden brown and crispy on all sides. This should take approximately 3-4 minutes per batch.
- Remove the fried vadas with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serve and Enjoy
- Serve the hot and crispy Chana Dal Vadas immediately with your favorite chutney, such as coconut chutney or tamarind chutney.
