  • Combine chopped cabbage, turmeric powder, red chili powder, ground fennel seeds, asafoetida, ginger-garlic paste, cumin powder, dry mango powder, chaat masala, salt, gram flour, 1.5 tsp oil, baking soda, and ½ cup water in a bowl. Mix thoroughly.

Steam the Cabbage Mixture

  • Grease a suitable mold with oil. Pour the cabbage mixture into the mold. Steam for 20 minutes, or until a toothpick inserted comes out clean. Let cool completely.

Prepare the Coating

  • Cut the steamed cabbage mixture into bite-sized pieces. In a separate bowl, whisk together rice flour and enough water to make a smooth slurry.

Coat and Freeze

  • Dip each cabbage bite into the rice flour slurry, then coat thoroughly with aloo bhujia. Freeze for at least 15 minutes.

Deep Fry

  • Heat refined oil in a wok or deep fryer. Deep fry the coated cabbage bites in batches until golden brown and crispy. Remove and drain on paper towels.
