Ingredients
For the Coating
- 1/4 cup Corn Flour
- 1 tsp Salt or to taste
- 1/4 tsp Pepper black
For the Garlic Sauce
- 2 tbsp Garlic minced
- 1 tbsp Ginger minced
- 1/2 cup Onions finely chopped, green
- 1/2 cup Tomato Sauce
- 2 tbsp Vegetable Oil for frying and sautéing
Instructions
Prepare the Potatoes
- Peel the potatoes and cut them into finger shapes. Place the potatoes in a pot of boiling water with 1/2 tsp of salt and boil for 5-7 minutes, until slightly tender but not mushy. Drain well and set aside.
Coat the Potatoes
- In a large bowl, combine the corn flour, 1 tsp salt, and black pepper. Add the boiled potatoes and toss until evenly coated.
Deep Fry the Potatoes
- Heat about 1 tbsp of vegetable oil in a large skillet or deep fryer to 350°F (175°C). Carefully add the coated potatoes and fry in batches until golden brown and crispy, about 3-5 minutes per batch. Remove and drain on a paper towel-lined plate.
Make the Garlic Sauce
- Heat the remaining 1 tbsp of oil in a pan over medium heat. Add the minced garlic and ginger and sauté for about 1 minute until fragrant. Stir in the green onions and tomato sauce. Cook for another minute until heated through.
Combine and Serve
- Add the crispy potato fingers to the garlic sauce and toss gently to coat. Serve immediately.
Recipe Notes
Expert Tips for Extra Crispy Potato Fingers
- For extra crispy potato fingers, allow the coated potatoes to rest for 15-20 minutes before frying. This helps the coating to set.
- Don't overcrowd the pan when frying. Fry in batches to ensure even cooking and crispy results.
- For a spicier kick, add a pinch of cayenne pepper or your favorite chili flakes to the coating.
- Experiment with different dipping sauces! Try aioli, ranch dressing, or even a spicy sriracha mayo.
