Ingredients
For the Potato Mixture
- 4 Potatoes and mashed, boiled, peeled
- 1/2 cup Semolina sooji
- 1/2 cup Coriander chopped, fresh
- 4 Chilies finely chopped (adjust to taste), green
- 1.5 tsp Salt or to taste
- 1 tsp Turmeric Powder for color and flavor (optional)
- 1/2 tsp Chili Powder or to taste (optional), red
For Frying
- 2 cup Vegetable Oil or enough for deep frying
- 1 tbsp Water for cooking the semolina
Instructions
Prepare the Semolina
- In a small saucepan, bring 1 tbsp of water to a boil. Add 1 tsp of oil. Stir in the semolina, remove from heat, cover, and let it sit for 2 minutes.
Combine Ingredients
- In a large bowl, gently press the cooked semolina with the back of a spoon to break up any lumps. Add the mashed potatoes, salt, green chilies, cilantro, turmeric powder (optional), and red chili powder (optional). Mix thoroughly until well combined.
Shape the Potato Fingers
- Lightly oil your hands. Take a small portion of the potato mixture and roll it into a finger-shaped log, about 3-4 inches long. Repeat with the remaining mixture.
Fry the Potato Fingers
- Heat vegetable oil in a deep pan or kadai over medium-high heat. Carefully place the potato fingers into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy on all sides, turning occasionally. This will take about 3-4 minutes per batch.
Drain and Serve
- Remove the crispy potato fingers from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve hot with your favorite chutney or dip.
Recipe Notes
Expert Tips for Perfect Crispy Potato Fingers
- For extra crispy potato fingers, allow the shaped fingers to rest for 10-15 minutes before frying. This helps to firm them up.
- Don't overcrowd the pan while frying. Fry in batches to ensure even cooking and optimal crispiness.
- Adjust the amount of green chilies according to your spice preference. Start with fewer and add more if you like it spicier.
- Experiment with different dips! These potato fingers pair well with mint chutney, tamarind chutney, yogurt dip, or even a spicy tomato ketchup.
