  • 50-60 grams Soy Chunk rehydrated and finely ground
  • Oil Oil for deep frying
  • 1/2 cup Water for rehydrating soya chunks and adjusting dough consistency

Prepare the Soya Chunks

  • Pour hot water over soya chunks and let them soak for at least 15-20 minutes. Once rehydrated, squeeze out all excess water and finely grind them using a blender or food processor.

Dry Roast Semolina

  • Dry roast the semolina in a pan over medium heat until lightly golden and fragrant. Remove from heat and let it cool slightly.

Combine Ingredients

  • In a large bowl, combine the cooled semolina, yogurt, mashed potatoes, green chillies, ginger paste, garam masala, chaat masala, and chopped coriander. Mix well to form a slightly sticky dough. Add salt to taste.

Incorporate Soya

  • Add the ground soya chunks to the mixture and mix thoroughly until everything is well combined. Add a little water at a time if the mixture is too dry.

Shape and Fry

  • Roll the mixture into small finger-shaped pieces. Coat each piece generously in cornflour.

Deep Fry

  • Heat oil in a deep pan or kadai over medium heat. Carefully drop the cornflour-coated soya fingers into the hot oil and fry until golden brown and crispy, turning occasionally. Remove with a slotted spoon and drain on paper towels.
