- 1 Chili finely chopped, green
- 1 tsp Ginger finely chopped
- 1/2 tsp Mango Ginger adds a unique flavor; substitute with extra ginger if unavailable., optional
Instructions
Preparing the Poha
- Rinse the flattened rice (poha) once under cold water and set aside. In a small bowl, gently mix the turmeric powder and sugar with the poha. Set aside.
Sautéing the Aromatics
- Heat oil in a pan over medium heat. Once hot, add mustard seeds and curry leaves. Allow them to sputter.
Adding the Flavor
- Add the chopped ginger, mango ginger (if using), and green chili to the pan. Sauté for about 30 seconds until fragrant.
Cooking the Poha
- Add the thinly sliced onions and sauté for another 30 seconds. Now, add the prepared poha mixture to the pan. Stir gently to combine. Add salt to taste. Cover the pan with a lid and cook over low heat for 4-5 minutes, allowing the poha to steam and soften.

- Remove the lid, stir in the chopped coriander leaves and mix well. Add the roasted peanuts and gently mix. Turn off the heat. Squeeze fresh lemon juice over the poha.
Serving
- Serve the Indori Poha hot and enjoy!
Recipe Notes
Expert Tips for Perfect Poha
- Use thick-variety flattened rice for best results. It holds its shape better and absorbs less oil.
- Don't overcook the poha! Overcooked poha becomes mushy. Aim for a soft but still slightly firm texture.
- Adjust the amount of water based on your preference. A little extra water creates a slightly softer poha, while less results in a firmer, drier texture.
- For extra flavor, consider adding a pinch of asafoetida (hing) along with the mustard seeds.
