Ingredients
 

Flattened Rice

  • 2 cup Flat Rice poha, thick variety is recommended for best results.

Spices & Aromatics

Other Ingredients

  • 1 tbsp Sugar
  • 1 medium Onion thinly sliced
  • 2 tbsp Oil vegetable or canola oil
  • 2 tbsp Peanuts roasted and coarsely chopped
  • 2 tbsp Coriander fresh, chopped
  • 1 Lemon
  • 1.5 tsp Salt adjust to taste
  • 1/2 cup Water adjust as needed for desired consistency.

Instructions
 

Preparing the Poha

  • Rinse the flattened rice (poha) once under cold water and set aside. In a small bowl, gently mix the turmeric powder and sugar with the poha. Set aside.

Sautéing the Aromatics

  • Heat oil in a pan over medium heat. Once hot, add mustard seeds and curry leaves. Allow them to sputter.

Adding the Flavor

  • Add the chopped ginger, mango ginger (if using), and green chili to the pan. Sauté for about 30 seconds until fragrant.

Cooking the Poha

  • Add the thinly sliced onions and sauté for another 30 seconds. Now, add the prepared poha mixture to the pan. Stir gently to combine. Add salt to taste. Cover the pan with a lid and cook over low heat for 4-5 minutes, allowing the poha to steam and soften.

Final Touches

  • Remove the lid, stir in the chopped coriander leaves and mix well. Add the roasted peanuts and gently mix. Turn off the heat. Squeeze fresh lemon juice over the poha.

Serving

  • Serve the Indori Poha hot and enjoy!
