Ingredients
 

For the Spinach Pakora Batter:

  • 1 bunch Spinach and roughly chopped, fresh, washed
  • 1 cup Gram Flour also known as besan
  • 1/2 cup Water adjust as needed to reach desired batter consistency
  • 1.5 tsp Salt or to taste
  • 1 tsp Chili Powder red
  • 1/2 tsp Turmeric Powder also known as haldi
  • 1/4 tsp Asafoetida adds a unique flavor, hing, optional

For Frying:

  • 2 cup Oil for deep frying, vegetable or canola oil

Instructions
 

Prepare the Batter

  • Combine the chopped spinach, gram flour, salt, red chili powder, turmeric powder, and asafoetida (if using) in a large mixing bowl.
  • Gradually add water, mixing until a smooth, slightly thick batter forms. The batter should coat the spinach leaves well but not be too runny.

Fry the Pakoras

  • Heat the oil in a deep-fryer or heavy-bottomed pot to 350°F (175°C). The oil should be hot enough that a small drop of batter sizzles immediately.
  • Carefully drop spoonfuls of the spinach batter into the hot oil, ensuring not to overcrowd the pan.
  • Fry the pakoras, turning occasionally, until they are golden brown and crispy, about 2-3 minutes per side.
