Ingredients
For the Spinach Pakora Batter:
- 1 bunch Spinach and roughly chopped, fresh, washed
- 1 cup Gram Flour also known as besan
- 1/2 cup Water adjust as needed to reach desired batter consistency
- 1.5 tsp Salt or to taste
- 1 tsp Chili Powder red
- 1/2 tsp Turmeric Powder also known as haldi
- 1/4 tsp Asafoetida adds a unique flavor, hing, optional
For Frying:
- 2 cup Oil for deep frying, vegetable or canola oil
Instructions
Prepare the Batter
- Combine the chopped spinach, gram flour, salt, red chili powder, turmeric powder, and asafoetida (if using) in a large mixing bowl.
- Gradually add water, mixing until a smooth, slightly thick batter forms. The batter should coat the spinach leaves well but not be too runny.
Fry the Pakoras
- Heat the oil in a deep-fryer or heavy-bottomed pot to 350°F (175°C). The oil should be hot enough that a small drop of batter sizzles immediately.
- Carefully drop spoonfuls of the spinach batter into the hot oil, ensuring not to overcrowd the pan.
- Fry the pakoras, turning occasionally, until they are golden brown and crispy, about 2-3 minutes per side.
Serve
- Remove the pakoras from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve the Palak Pakoras hot with your favorite chutney and a cup of tea or chai.
Recipe Notes
Expert Tips for Perfect Palak Pakoras
- For extra crispy pakoras, ensure your spinach is thoroughly dried before adding it to the batter. Excess moisture can make the pakoras soggy.
- Don't overcrowd the pan while frying. This will lower the oil temperature and result in oily, less crispy pakoras.
- Adjust the amount of red chili powder to your preferred spice level. For a milder flavor, reduce the amount or omit it entirely.
- Experiment with adding other spices to your batter for a unique twist, such as cumin powder, coriander powder, or garam masala.
