Instructions

Prepare the Taro Root

  • Wash and thoroughly boil the taro root until completely soft. Peel and mash the cooked taro root using a fork or potato masher.

Prepare the Spice Mixture

  • In a bowl, combine corn flour, turmeric powder, red chili powder, roasted cumin powder, garam masala, and salt. Mix well.

Combine and Shape the Tikkis

  • Add the mashed taro root to the spice mixture. Mix thoroughly until everything is well combined. Form the mixture into small, flat patties (tikkis).

Shallow Fry the Tikkis

  • Heat clarified butter and oil in a pan over medium heat. Gently place the tikkis in the pan and shallow fry until golden brown and crispy on both sides. This should take about 2-3 minutes per side.

Serve

  • Serve the hot Arbi Tikkis immediately, garnished with lemon wedges and sliced green chilies.

Recipe Notes

Expert Tips for Perfect Arbi Tikkis

  • For extra crispy tikkis, allow the shaped patties to rest in the refrigerator for at least 30 minutes before frying. This helps them firm up.
  • Adjust the amount of red chili powder to control the spiciness level according to your preference.
  • Don't overcrowd the pan while frying. Fry the tikkis in batches to ensure even browning and crispiness.
  • If you prefer a healthier option, you can bake the tikkis in the oven at 375°F (190°C) for about 20-25 minutes, flipping halfway through.
