Ingredients
Corn Disks
- 2 Corn Cobs cut into 1- to 1.5-inch thick disks
Marinade
- 0.5 cup Hung Yogurt or greek yogurt
- 2 tsp All-Purpose Flour
- 2 tsp Schezwan Sauce or garlic paste, or red chili garlic paste
- 1 tsp Herbs mixed
- 0.25 tsp Chili Powder or more, red, to taste
- 1.5 tsp Salt or to taste
Garnish
- 1 Lemon cut into wedges
- Chaat Masala
Instructions
- In a bowl, combine the hung curd (or Greek yogurt), flour, mixed herbs, salt, Schezwan sauce, and red chili powder. Mix well.
- Cut the corn cobs into 1- to 1.5-inch thick disks.
- Add the corn disks to the marinade. Mix thoroughly, ensuring each disk is evenly coated. This ensures even flavor distribution and helps the marinade adhere properly during cooking.
- Cover the bowl and refrigerate for 45 minutes to 1 hour. This allows the corn to absorb the flavors of the marinade.
- Preheat the air fryer to 180°C (350°F) for 5 minutes. Preheating ensures that the corn disks cook evenly and crisp up nicely.
- Arrange the marinated corn disks vertically in the air fryer basket, ensuring they are not overcrowded. Air fry for 20-25 minutes, flipping halfway through, until golden brown and crispy. Flipping ensures even cooking on both sides.
- Remove the corn disks from the air fryer. Sprinkle with chaat masala and squeeze fresh lemon juice over them. Serve immediately.
Recipe Notes
Good To Know
- You can marinate the corn discs overnight.
- Adjust the spiciness to your liking.
- For extra crispiness, lightly brush the discs with oil or melted butter before air frying, flipping halfway through.
- For a cheesier flavor, sprinkle grated processed cheese or crumbled paneer on top before air frying.
- To make the discs gluten-free, substitute regular flour with chickpea flour (besan) or rice flour.
- Serve with mint chutney or a yogurt dip with chaat masala and lemon juice.
Expert Tips
- Experiment with different spices in the marinade, such as cumin, coriander, or garam masala, to create unique flavor profiles.
- For a visually appealing presentation, use a cookie cutter to shape the corn discs before cooking.
- Don't overcrowd the air fryer basket. Cook the discs in batches to ensure even cooking and crispiness.
Storage Instructions
- Store leftover corn discs in an airtight container at room temperature for up to 2 days. Reheat in the air fryer or oven for a few minutes to restore crispness.
